A signature Queen Street basement bar in Edinburgh's storied New Town, Panda offers drinks of great theatre and flair. Its famous Birdcage, featuring a smoke-filled cloche lifted with a flourish to reveal the drink beneath, is a regular sight. Always working on something, owner Iain McPherson has pioneered a new deep-freeze technique known as Switching, which brings fresh verve and depth to classics such as the house Negroni and Coconut Daiquiri. The current menu features collaboration drinks with bars that McPherson has visited on extensive travels. This showcases both innovative ingredients and the global village of bartending of which McPherson is increasingly a leading light.
