Located in Dubai’s Bulgari Hotel in a space that also houses Italian MENA’s 50 Best Restaurants-listed Il Ristorante Niko Romito, the oval-shaped bar is helmed by moustachioed bar director Dario Schiavoni. The glamorous space boasts views of the marina, custom-designed chandeliers hung in the shape of the Bulgari logo and black Portoro marble. Bulgari Bar’s menu draws inspiration from flowers and colours, using natural ingredients – of which every part is used – to create striking and unexpected drinks. Purple Sky, using blue butterfly tea-infused Ketel One, lemon and Perrier water creates a visually intriguing cocktail, as does the Clear Espresso Martini.
More unusual flavour combinations include Is Not A Paloma, with Los Siete Misterios mezcal, lime, sumac and tamarind soda. Twists on classics include the Improved Sidecar, with cognac, banana and coffee hazelnut liqueur, and five different takes on Negronis. There’s also a section of the menu dubbed Super Classic, which uses premium spirits to elevate classic cocktails such as the Rum Old Fashioned, using Matusalem 23.
