Paintings by Alejandro Magallanes round out the experience with a uniquely Oaxacan ambience. True to form, mezcal is the specialty here and they do it right. Sabina Sabe touts one of the largest libraries of the spirit in the world. Remarkably, the staff is intimately familiar with each and every expression, able to wax lyrical on the big-time producers and independent artisans alike. The team are pros at guiding everyone from amateurs to aficionados through the complicated list. The bar also offers cocktails, with a Negroni-heavy list along with some very modern takes on mezcal. A well-paired food programme rounds out the offerings with a menu of local ingredients, such as its garnachitas mai lob (miniature fried tortillas bites). Whichever direction you choose, Sabina Sabe is sure to make guests feel at home; hospitality is the greatest Oaxacan tradition.
