Rayo takes inspiration from the Mayahuel, a pre-Columbian goddess associated with agave. The historic roots are offset by the Roma Norte hotspot’s modern embrace of Mexico’s rich heritage. Mayahuel’s fabled lightning bolts are sculpted in neon fixtures, casting a blue hue over the sleek, multilevel interior.
Agaves decorate the interior as well as the innovative cocktail list. Mexican mythology also provides inspiration for each of the drinks. A third of the menu offers Classics with a Twist like Rayo’s Fermented Penicillin (Scotch, mead, ginger beer, smoked tequila). Creative director Tito Pin-Perez’s team really shines in the Signature Section featuring their own creations such as their trademark Pepe el Toro (whiskey, Nixta, lemon, pineapple, cooked agave mix topped with soda). A final section offers guests non-alcoholic options built with familiar cocktail ingredients such as agave syrup and a pourable bitters syrup. The celebration of Mexico’s rich heritage is also evident in an immense Spirits and Drinks list. Nearly 1,000 offerings span the gamut from five Fresh Waters to hundreds of agaves. A talented kitchen offers elevated takes on classic bar fare like the delicious criollo corn tlacoyos.
As the bar which enters the list which has opened in the last 18 months, Rayo earns the title of the London Essence Best New Opening Award.
