Not many venues can boast both an award-winning restaurant and award-winning bar; Tippling Club, also a regular on Asia’s 50 Best Restaurants list, is one. Indeed, since it opened its doors in Singapore nine years ago, no one has done more for modern cuisine and cocktail pairing than chef-founder Ryan Clift.
As of last year, another Englishman, Joe Schofield, became captain of liquid at Tippling Club, where the popular bar space sits alongside the dining room. A young man with an impressive CV (American Bar, Beaufort Bar and Zetter Townhouse) Schofield has made waves with his new Sensorium Menu, which is designed to trigger memories through aroma. The cocktail Geosmin is inspired by the smell after rain has fallen (Schofield is from the north of England – enough said) and sees vodka re-distilled with the chemical compound Geosmin, edible stone, citrus and soda, garnished with an edible rain cloud. Fancy a classic? The Sonic Negroni is aged with ultrasonic sound waves and garnished with a slice of Negroni Jelly – that’s as classic as it gets at the innovative Tippling Club.
