Renowned bartender Shingo Gokan’s first foray into the Tokyo scene (he already has two Shanghai establishments on Asia’s 50 Best Bars list), this on-trend subterranean cocktail bar is split over two floors, each with its own identity and menu. Up top is Guzzle, a more playful and casual bar, with Sip sitting below, harking back to art deco speakeasies in Manhattan, inclusive of a shoe-shine service and typical Japanese bartender professionalism. Cocktails here blend ingredients, techniques and flavour combos from Japan and around the world, with great results – it is a new entry on the 2019 edition of Asia’s 50 Best Bars, charting in the top 20.
