The Old Man

Hong Kong, China

50Best Accolades
  • No.47 Asia's 50 Best Bars 2023
  • No.9 The World's 50 Best Bars 2019

Hong Kong's The Old Man has become an important part of Asia's cocktail scene since it opened in 2017, not only joining the top 10 of The World's 50 Best Bars in 2018 (and winning the Highest New Entry Award in the process), but also taking top spot in Asia's 50 Best Bars in 2019. Ernest Hemingway – the Old Man in question – features prominently, with contemporary techniques and equipment used to make a range of drinks inspired by his novels. ‘For Whom the Bell Tolls’, for example, is a concoction of cocoa nibs sous-vide batavia arrack, rotovap burnt butter rum, sour strawberry and avocado burst. Hemingway would approve.
