LIKE A FINALIST AT CRUFTS, this bar’s got impeccable pedigree. Industry legend - and publicity-adverse - Sasha Petraske, of Milk & Honey fame, took his specialist brand of cocktail magic to Melbourne in 2011 and opened The Everleigh with NYC bar veteran Michael Madrusan, who just happens to be an Aussie native. Bonza.

Oh and by the way, did we mention the bar takes its name from a brothel? Not just any brothel, though - a famous high-class joint run by the Everleigh sisters in Chicago around the turn of the 20th century. 

The only connection now, we’re pleased to say, is the high-class bit - it’s an intimate, sepia-toned affair and you can only sit. Don’t turn up with a big crowd, either, for this establishment caters for ‘parties of six or less’.

Cuddle up with a lover in one of the booths and nod along to piped jazz with a 20s feel.

Cocktails, as you would expect from such a big daddy of the drinks world, are impeccable. Fruits and juices are super-fresh and ingredients are tip-top. The list is short and perfectly formed and our Negroni remains one of the best we’ve ever had. Anywhere. Ever.
