Tucked away down a cobbled street in Prague you'll find this little hole-in-the-wall, dedicated to the memory of one of history's most famous drinkers. In among the rare bottles and absinthe fountains you'll find some original cocktails made with thoroughly modern techniques, like the clarified Eton Mess which mixes gin, strawberry, lemon, sugar and yoghurt, garnished with a shard of meringue. As you might expect, a few of the cocktails are inspired by Hemingway himself, like the Oak Park Fountain (named after the Chicago suburb where the great man was born), which combines absinthe, lemon, honey, grapefruit, tonic water and Thai basil.
