Mexicana drinking den Coa is a shrine to all things agave. Inspired by owner and hospitality hero Jay Khan’s trips to Mexico, the bar is named after the axe-like tool used to harvest the plant used to make the spirit. Coa’s collection of over 180 hand-crafted spirits includes tequila, mezcal, raicilla, sotol, bacanora, charanda and a variety of pechuga mezcal, from turkey breast to lamb leg distilled. Khan is well versed in the category of agave and is always happy to educate curious guests, but his stand-out cocktail menu should not be missed. The La Paloma de Oaxaca – tequila blanco, mezcal espadin, lime juice and grapefruit soda with an umami worm salt rim – has become something of an icon. Khan can often be found experimenting with various ferments such as tepache and rice beer, and the bar even has a private label of artisanal blanco tequila. Coa is also the winner of the Nikka Highest Climber 2020, after a meteoric rise from 49th to 8th place in this year’s ranking.
