Formerly of one-time Asia’s 50 Best Bar list-topper The Old Man Hong Kong, Agung Prabowo – along with his wife Laura and business partners Roman and Katy Ghale – leads Hong Kong’s original ‘closed-loop’ cocktail bar, which aims to respect its environment in everything it does. In 2021, the bar was rewarded with the Ketel One Sustainable Bar Award, and it has continued to evolve its green practices since, further reducing waste and impact on its environment as time has passed.

The bar takes its name from Alexander Fleming’s discovery of the antibiotic penicillin and the white-tiled, borderline-scientific interior hammers home the identity. Behind the bar, expect all the equipment, gadgets and wizardry one would also expect of a laboratory. Local and upcycled ingredients take the limelight across its menu, as well as a range of organic ferments from the bar’s in-house climate-controlled fermentation enclosure (aka ‘The Stinky Room’). Penicillin has also partnered with ecoSPIRITS and Green Step Group for the ‘One Penicillin, One Tree’ project, whereby a new tree is planted in the Kalimantan rainforest area in Borneo for every one of the specialty cocktails purchased. The drink in question is a smooth concoction of apple skin whisky, turmeric sherbet, burnt milk and homemade apple cider. The bar’s decor also features sustainable elements, such as tabletops made from trees felled by typhoons in Hong Kong and lighting repurposed from nearby businesses.
