Formerly of one-time Asia’s 50 Best Bar list-topper The Old Man Hong Kong, Agung Prabowo – along with his wife Laura and business partners Roman and Katy Ghale – leads Hong Kong’s first ‘closed-loop’ cocktail bar, which aims to respect its environment in everything it does. Despite only launching in late 2020, the eco-friendly principles it has established have seen it win the Ketel One Sustainable Bar Award 2021, after an assessment by Food Made Good Global, 50 Best’s official sustainability partner.

The bar takes its name from Alexander Fleming’s discovery of the antibiotic penicillin and the white-tiled prep lab decked out with the latest bar tech is the first thing you see upon arrival. Expect lots of local and upcycled ingredients, as well as a range of organic ferments from the bar’s in-house climate-controlled fermentation room (aka ‘The Stinky Room’). Penicillin has also partnered with ecoSPIRITS and Green Step Group for the ‘One Tree One Penicillin’ project, whereby a tree is planted for every one of these cocktails purchased. The cocktail in question is a smooth concoction of apple skin whisky, turmeric sherbet, burnt milk and homemade apple cider. The bar’s decor also features sustainable elements, such as tabletops made from trees felled by typhoons in Hong Kong and lighting repurposed from nearby businesses.
