This is a hotel bar with a seriously independent feel. The Other Room has pioneered the use of cask ageing with it cocktails and does so with serious aplomb. Led by master bartender Dario Knox, the drinks programme covers more than 150 spirits, aged in different types of wooden cask to give unique layers of flavour. You can try them individually in a tasting flight or as the base of refined cocktails, such as the Old Fashioned Way, made with sherry cask-finished rum. The current menu – called Timeline – includes cocktail recipes that are inspired by drinks served as far back as the 17th century.
