The DNA of this bar is Singapore in essence; it’s as simple as that. The team, helmed by bar manager Shelley Tai and head bartender Joshua Pang, is proud of the country's heritage and history and strives to reinterpret Singaporean and Asian flavours into progressive cocktails. They will often use familiar local ingredients in a way that tells the stories of Singapore’s background.
The latest menu, Flavours & Memories Volume 6: The Cocktail Diaries, resembles a tourist’s love letter to Singapore in the form of a journal and shares interesting takes on unique facts and figures many may not know. Start with the refreshing Garden City, an herbaceous cocktail that is an ode to the Singapore Botanic Gardens, a UNESCO Heritage Site. Continue with the GMT Martini and learn that Singapore has adopted different time zones on six different occasions over course of the last century. The team’s heritage approach extends to the food offerings, too. Go for the SG Scotch Eggs, the Otak Otak and the Dry Mee Siam. All will fill your belly and warm the soul, providing a small slice of education as they do so.
