Housed in the glamorous Rosewood Hong Kong hotel, Darkside takes its name from the colloquial moniker for the Kowloon side of Hong Kong, where the Rosewood is located. Taking inspiration from all things dark, Darkside focuses on dark spirits, cigars and chocolate which, when combined with the live music, makes for an altogether elegant experience. A fantastic view over Victoria Harbour and high-end art adorning the walls works in synergy with the bar’s soundtrack of nightly vocalists of varying genre. Classics are the name of the game here, all composed under the watchful eye of beverage director Arcadius Rybak and bar manager Simone Rossi. The bar has its own specially sourced cask of grande Champagne cognac and exclusive cask-aged port, both of which you can taste from barrel to glass. The Gibson here is a star in its own right, with your choice of a vodka or gin base, Riesling wine, Mancino vermouth secco and bianco, sherry and onion essence.
