After debuting with the Highest New Entry Award in 2019, when it landed at No.12 in the list, Coa furthers its assault on the upper echelons of the ranking in 2020. Its owner-bartender Jay Khan has also been voted the Altos Bartenders’ Bartender 2020, marking an excellent year for the local lad with a penchant for agave spirits. Khan named his Hong Kong bar after the machete-like tool used for harvesting agave – the plant from which both mezcal and tequila are distilled. Coa pays homage to both spirits, offering the city’s largest agave collection, clocking in at around 200 bottles. Khan has visited every distillery on this list, so all serves come with a side-helping of his own liquid history. Within the candle-lit, industrial-designed space, spirit enthusiasts pop in for rare mezcal varietals and other unsung agave-based liquors, plus signature cocktails like the grapefruit-spiked mezcal and tequila blend, La Paloma de Oaxaca, which is the only cocktail that has been on the list since the bar opened.
