After years of being frustrated and underwhelmed by the existing selection of cocktail bitters available on the market, Seattle bartender Miles Thomas took matters into his own hands in his search for a better bitters. He dove headfirst into research and development, immersing himself in the world of herbs and extraction methods. He learned to pair flavours to intensify the taste he was seeking, and came to understand that there were not only many ways to extract flavour from the same source, but that each yielded a different taste. His journey proved fruitful; after years of experiments, Scrappy’s Bitters officially launched in 2008, and a small but dedicated team in Seattle, Washington has been making the finest bitters in the world ever since.
