A hotel bar that many hip independents could learn a thing or two from, The Other Room has pioneered the use of cask ageing. Led by master bartender Dario Knox, the drinks programme covers more than 150 spirits, aged in different types of wooden cask to give unique layers of flavour. You can try them individually in a tasting flight or as the base of refined cocktails, such as the Old Fashioned Way, made with sherry cask-finished rum. The latest menu – called Timeline – includes cocktail recipes that date as far back as the 1500s.
