Modern minimalism is elevated to an art form at this Tokyo joint with no cocktail menu, music or even shelves. Instead, a bespoke, easonal menu (you can choose between four or six drinks) is prepared by Yamamoto-san himself, who is the only secret – and only employee – of the successful joint. A specially chosen piece of glassware and a flower accompany each of the drinks, which may include sparkling sake with fresh muddled gooseberry, rice grappa with pureed plum or sweet potato with carrot and mandarin. The impressive bar is made out of two slabs of wood from a 500-year-old Japanese oak.
