Quinary is simultaneously a pioneer and a stalwart of the Asia bar scene – a hub of innovation and experimentation, and yet somewhere drinks lovers keep returning to as a trusted haven. It’s a combination that is based on founder Antonio Lai and his team’s ability to push the boundaries in their creative cocktails while ensuring customers feel at home due to the stellar service. It’s also a blend that has seen Quinary remain in the upper echelons of the Asia’s 50 Best Bars list since the inception of the ranking, earning it the deserved title of Heering Legend of the List 2021.
Lai – the man responsible for several of Hong Kong’s top drinking dens – launched Quinary in 2012, inspired by the molecular magic of chefs such as Ferran Adrià and Heston Blumenthal. The industrial-designed space, with a long, glowing bar, takes a modernist approach, with drinks engineered to stimulate multiple senses via texture, aroma and sound as well as taste. These are cocktails to challenge preconceptions and delight with the unexpected, created with the aid of technology such as rotovap distillation and centrifuges.
The latest menu takes inspiration for the food markets of HK and further afield, continuing the crossover between the edible and the drinkable. The bar’s signature Earl Grey Caviar Martini remains a crowd favourite, made with orange liqueur, citrus vodka, elderflower syrup, topped with Earl Grey caviar ‘air’.
