Named after the famous bartender who changed American cocktail culture in the 19th century, The Jerry Thomas Project is Rome's premiere speakeasy. The snug bar opened in 2010 with a cosy design scheme that makes the atmospheric, dimly-lit space feel a lot like a clandestine living room bar. The exquisitely balanced cocktails are some of the best in all of Italy. Know before you go: the bar is members-only, but one can apply for inclusion once inside for five euros. Smoking is still permitted indoors and reservations are highly recommended because the place is so small (and the reservation process is also how you discover the required password for entry for the day). When visiting, make sure to try the house vermouth, Vermouth del Professore, a collaboration made with Antica Distilleria Quaglia that launched in 2013.
