'Rum is incredibly diverse and can be used in so many ways,' says Martin Cate, owner of Smuggler's Cove in San Francisco and all round tiki devotee.
'Tiki drinks (Exotic Cocktails I prefer) are special because they're a wholly unique American invention, inspired by the flavours and traditions of the Caribbean, but with a baroque twist.' All of which pretty much sums up Cate's approach to drinks and at Smuggler's Cove he's allowed to make them with the gloves off.
Cate became interested in bartending and exotic cocktails in the late 90s and worked at Trader Vic's in San Francisco before opening Smuggler's Cove in 2009. There's no mistaking the theme inside - nautical decor, skulls, crossbones, Hawaiian shirts and even the original Trader Vic's 'Boathouse' sign are a bit of a giveaway, and the fact that it has earned plaudits such as the Best Cocktails in the Bay Area in the SF Bay Guardian and Top Three Spirit-Specific Bars in America in GQ, emphasises the success of that theme.
