Paris isn't normally associated with Mexican grub and South American spirits, but Candelaria is no normal venue. It opened its doors in March 2011 and, according to co-founder Carina Soto Velasquez, the bar was born out of wanting to add a new experience to the Paris cocktail scene.

'We wanted to showcase South American spirits such as mezcal, pisco, cachaca and tequila alongside great Mexican food,' she says.

The venue is intimate and laid-back and it has helped shape Paris's more contemporary cocktail scene.

Velasquez says: 'In the past five years the Parisian bar scene has been changing. The main reason is because today Paris has bartenders who care about their city and invest in her. Today bartenders are professionals in the industry and take their job seriously. We see the possibility to grow and achieve projects.'

Velasquez and her team's passion for their profession means Candelaria is not only in the top 10 this year, it's also our Highest Climber and Best Bar in Europe. The Cocktail Brunch menu is available from 12.30-16.00 on Saturdays and Sundays and, if you're going to spend the next evening checking out all of the other Parisian bars on the list, you'll need the house special - a Bloody Maria.
