BARTENDER TIM PHILIPS was making waves long before his World Class victory - he was part of the award-winning team at Black Pearl, Melbourne, and also did a stint at Milk & Honey in London and its sisters in New York and Chamonix.
But it was winning World Class in 2012 that really put him on the international stage. He was at Hemmesphere, part of the Merivale outfit and also in Sydney, at the time of the victory but soon after he opened his own gaff, Bulletin Place.
Of course, he’s not the only face behind the project - there are three of them. Fellow big-hitters Adi Ruiz, who was big on the bar circuit in Melbourne, and former Diageo Reserve brand ambassador Robb Sloan make up the trio at this little place nestled somewhere between Circular Quay and the CBD.
It’s a bit tricky to find but there’s a cafe below and a tattoo parlour above. Sounds like a recipe for a great night out - start with a coffee, then a few cocktails and finish by getting I heart Bulletin Place tattooed on your face.
Or just enjoy one of a handful of regularly-changing cocktails, written up on butcher’s paper behind the counter.
Last year, Bulletin Place reached the dizzy heights of number 26 in this poll, despite being open for under a year.
We’re not surprised to see it back again this year and we’re totally stoked that it has climbed to number 19.
