Heering Legend of the List – Asia 2018: speak low
With the opening of Speak Low in 2014, Shingo Gokan succeeded where many had failed: he created a speakeasy in Shanghai that still feels as fresh, mysterious and sophisticated today as it did four years ago. The Tokyo-born cocktail mastermind behind Angel’s Share in New York channelled all of the Big Apple’s charm into this three-storey venue, making the city’s early tries at the neo-speakeasy genre seem redundant.
Not by chance, then, is Speak Low this year’s Heering Legend of the List, an award for the bar that has performed most consistently over the history of the list. Having first appeared at No.2 in the inaugural edition of Asia’s 50 Best Bars in 2016, it has maintained its place within the top three for the past three years – all thanks to the hard work of Gokan himself, who has achieved legendary status in the industry in the process.
With right-hand man Atsushi Suzuki, a Chivas Master Global Champion, Speak Low’s offering is still creative and innovative. From the classic Speak Low – the bar’s namesake crowd-pleaser, with Bacardi, Bacardi 8, Pedro Ximenez sherry, matcha tea and kinako, a kind of roasted soybean flour – to the newer On The Beach (combining Absolut Elyx, fermented pineapple, plum wine, cranberry and maple shrub), each drink on the menu pleases and surprises.
