The latest creation of Agung Prabowo, James Tamang and Roman Ghale is a force to be reckoned with, entering the list at No.5. Opened in August 2017, the elegant bar pays homage to Ernest Hemingway’s Pulitzer Prize-winning 1952 novel with a menu of nine experimental cocktails inspired by the writer’s favourite ingredients and combinations, from butter-fat-washed gin to beeswax-infused bourbon. The classics are also covered – ask for a whisky highball or a Negroni and you might walk out with the inspiration for a book of your own. Hemingway himself oversees the operation from a mosaic made from the excess materials from building the venue.
